Bubble tea was invented by Taiwanese in 1980s. It was a wonderful mistake when a cleaner put all the tea, tapioca, jelly, milk all together, then found that it was delicious. As a Taiwanese, it is my pleasure to introduce bubbles tea!
TAIWAN Bubble Tea Recipe
1 cup (500ml)
Ingredients: 1/4 cup dried tapioca pearls (bubbles) per serving (avoid easy-cook bubbles), where you can buy bubbles at an Aihua supermarket. 6 grams of tea leaves per serving, ex: Shan, Red Jade, Oolong tea. 1/2 cup milk or water. 1 cup brown sugar/white sugar and/or 3 teaspoons of Scottish honey. Equipment: Cooking pan Bowl and sieve for holding the cooked bubbles. Measuring cup
Instructions: 1.Cooking bubbles: Boil 2 cups of water then add 1/4 cup of bubbles until all the bubbles float to the top of the water. Turn the heat to medium and cook the bubbles for 12 to 15 minutes to boil, then add cold water, repeat previous action until them turn brown no white core. Cover with lid and set aside for 25 minutes. 2.Making sweet bubbles: Stir the bubbles with 1/2 cup of brown sugar and/or 2 teaspoons of Scottish honey until dissolved. Set aside to cool for 5 mins. 3.Prepare a strong cup of tea: Brew the tea leaves with milk or water and 1 teaspoons of Scottish honey, depends on what you like and bring to a boil. Remove tea leaves and cool the tea. 4.Make the bubble tea: Pour the prepared (milk) tea into a tall glass and add the bubbles. You can add some ice cubes to make chilled bubble tea. Then enjoy bubble tea with big straw! Please Note: Bubbles can be preserved under room temperature for 5-7 hours after soaked with sugar. Once you put them in the refrigerator, it becomes hard and crunchy.
